This bottle holds a promise. Whoever buys it will receive that promise, a vow from local farmers to hold strong to our traditions. The heritage left by our ancestors is nowadays in danger. Many old farmers are slowly retiring, and few younger farmers are stepping in to fill those vacant places. 
In this bottle goes the olive oil made from trees that are about to be abandoned. With your help, we can hold longer and try to wait for our society to change its mind...
 
This olive oil, made later in the season, has a rounder flavour that recall a more mature olive. The vibrant peppery and buttery taste is maintained to tell you that you're still in Tuscany. Perfect on lighter dishes like steamed vegetables, plain rice and pasta, it deserves a place with all other food that do not want to be "disturbed" too much.
